The Minnesota Department of Agriculture (MDA) announced last week the recipients of their Farm to School Grant. St. Anthony-New Brighton (SANB) was one of the districts to receive  funding with a Farm to School Full Tray Grant to increase the variety and volume of local products. Read the MDA press release.

At SANB, we celebrate Farm to School and scratch cooking with our MN Thursday program. In previous years, MN Thursday has always been the second Thursday of each month. After MN Thursdays took a hiatus last year due to the pandemic, next year’s menus will feature twice monthly MN Thursdays. Each MN Thursday menu is entirely sourced from local products. This includes fresh produce, proteins, grains and specialty desserts. We will purchase products and ingredients from over 20 local suppliers. The menu for next year’s MN Thursdays includes:

  • Beef mega meatball over pasta, roasted broccoli and cauliflower (The Good Acre, Falcon Heights, MN), a homemade garlic knot and a local apple.
  • Diced Turkey (Ferndale Farms, Cannon Falls, MN) and gravy, delicata squash (The Good Acre, Falcon Heights, MN), wild rice (Red Lake Nations Foods, Red Lake, MN).
  • Chipotle Pinto Bean (Askegaard Organic Farm, Moorhead, MN) Tostadas (La Perla Tortillas,  Minneapolis, MN).
